Crock-pot “Non” Tortilla Soup

Been wanting to make this for some time, but needed to figure out what to replace the corn and tortilla’s with– this is how I Paleo flipped this baby!

Crock-pot “Non” Tortilla Soup


INGREDIENTS

  • 1 ½ pounds of chicken, chunks
  • 1 pound spicy chicken sausage, chunks
  • 4 cups chicken broth
  • 8 oz butternut squash, cubes
  • 1 green bell pepper, chopped squares
  • 1 red bell pepper, chopped squares
  • 12 baby carrots, halved
  • 1 medium onion, chopped

serves: 4-6

  • 28 oz diced tomatoes
  • 2 tablespoon garlic
  • 1 medium onion, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon oregano powder
  • 1 teaspoon cayenne pepper
  • 3-4 bay leaves
  • ¼ cup cilantro
  • sea salt & pepper

** DIRECTIONS
  1. In crock pot mix all ingredients except cilantro and cook on high for 4 hours.
  2. Serve with cilantro garnish. In replacement of the crispiness of tortillas I use some thickly sliced cabbage slaw.
