Been wanting to make this for some time, but needed to figure out what to replace the corn and tortilla’s with– this is how I Paleo flipped this baby!
Crock-pot “Non” Tortilla Soup

INGREDIENTS
- 1 ½ pounds of chicken, chunks
- 1 pound spicy chicken sausage, chunks
- 4 cups chicken broth
- 8 oz butternut squash, cubes
- 1 green bell pepper, chopped squares
- 1 red bell pepper, chopped squares
- 12 baby carrots, halved
- 1 medium onion, chopped
serves: 4-6 |
- 28 oz diced tomatoes
- 2 tablespoon garlic
- 1 medium onion, chopped
- 1 teaspoon cumin powder
- 1 teaspoon oregano powder
- 1 teaspoon cayenne pepper
- 3-4 bay leaves
- ¼ cup cilantro
- sea salt & pepper

** DIRECTIONS |
- In crock pot mix all ingredients except cilantro and cook on high for 4 hours.

- Serve with cilantro garnish. In replacement of the crispiness of tortillas I use some thickly sliced cabbage slaw.
